In a large bowl, combine the flour with all the dry ingredients. Add the oil and rub it into the flour mixture. Gradually add warm water and knead until the dough comes together and is smooth.

Let the dough rest for 1 hour. Then, divide it into small balls, flatten each by hand, and fill as desired. I used cheese, chocolate, and sugar for a variety of fillings.

Arrange the filled pastries on a lightly oiled baking sheet. Let them rest for another 30 minutes. Brush the tops with egg and milk, then sprinkle with sesame seeds or nigella seeds. Bake in the oven. Once out of the oven, cover immediately with a towel to keep them soft.
