#FMC Dal makhani or maa ki dal !!
Som etimes when you ask people of their favourite food, the animated answers bring in a lot of emotions and memories attached to it. For some it’s all about the feelings and what better then dal makhni. For my family this dal is all about the love, the warmth and the wholesomeness that it brings to our table. It invokes a lot of emotions where we have had the best conversations over this meal!! A very rich,and beautiful dal made of ingredients whole black lentil (urad), red kidney beans (rajma), butter and cream. The dish gets it's richness from the use of cream, but it can also be prepared with yogurt, milk or no dairy. Today’s dal that i have made has no cream whatsoever, but a wonderful smoky dal it is!!

Lets divide the dal makhani in two parts:-

Ingredients

  1. Ingredients:- to soak
  2. 1 CupWhole Urad Dal
  3. 1/2 CupRajma
  4. Masala:-
  5. 2 tbspButter
  6. 1/2 tbspCumin Seeds
  7. 4Cloves
  8. 1Black Cardamom
  9. 3Green Cardamom
  10. 2 InchCinnamon
  11. 1Bay leaf
  12. PinchJavitri (Mace)
  13. 1 CupChopped Onion
  14. 2dry red chilli soaked in hot water
  15. 2 tbspGinger Garlic Paste pulsed with the dry chilli
  16. 2 tspsalt
  17. 1 tspRed Chilli Powder
  18. 1/4 tspNutmeg Powder
  19. 2 cupsTomato Puree
  20. 2Green Chillies Slit
  21. 2 tspGaram masala
  22. 2-4 tsproasted crushed kasuri methi
  23. to tasteSalt
  24. As neededGinger juliennes to garnish
  25. For the dhungar method:-
  26. 1small piece charcoal
  27. 2 tbspmelted ghee

Steps

    Soak All Dals separately for a good 8- 10 hours but the best results would be to soak them overnight
    Pressure Cooking the Dal:-
    In a pressure Cooker add all the Dal's,Water and Pressure cook for about 18-20 Whistles.These many whistles are done so that the lentils get cooked easily and they become nice,softer and mushy. This in turn will help the dal to cook to a nice consistency and to make it more creamier.
