Steps
- 1
Measure your atta and all purpose flour and put them in the bowl you'll use for kneading. I prefer a plastic bowl or 'karai'.
- 2
Add your salt. Mix the flour. Add your carrots and mix again till well distributed.
- 3
Make a well at the centre. Add your liquids to the well. Start with milk if you are using milk. Add some oil and then slowly add the warm water as you slowly incorporate it into the flour mixture. Start kneading slowly until you get a non-sticky consistency. Continue kneading until your dough is smooth, all ingredients are well incorporated and it no longer sticks to the side of your bowl. Set aside for a while to rest.
- 4
Knead the dough slightly after rest. It should be nice and soft at this point. The next step varies with preference. I divide the dough into smaller balls which will be the individual chapatis, roll the out, apply oil, roll the back up and coil them to form the shape in the pic below. Repeat with all the balls till done. Set them aside for a while or start cooking them from the first ball you rolled out.
- 5
Roll the balls into circles and pan fry them till golden brown.
- 6
Serve with your stew of choice and enjoy.
