To keep muffins soft add buttermilk to it. Buttermilk lifts the batter.

To keep muffins soft add buttermilk to it. Buttermilk lifts the batter.
Steps

Sift flour, cocoa, baking powder and soda. Keep aside.

Beat butter and sugar till soft and fluffy. Add essence and beat again.

Add 2 tbsp flour mixture and little buttermilk to the butter sugar mix. Fold in gently. Add remaining flour and buttermilk also in batches.

Fold choc chips on batter. Do not mix too much.

Grease muffin cups. (Use silicon moulds or butter paper cups). Pour in the batter little by little, filling them abiut 3/4th full. Tap lightly.

Bake at 180 deg celc. For about 25 mins. Do not check using toothpick. Do not over bake.

For better results add water in baking try in which you placed your muffin try.
