It's a well known Nigerian delicacy and very easy to cook

Slice the onions and set it aside

Blend together tomatoes and red pepper

Boil the chicken with seasoning cubes, sliced onions, salt, curry and some thyme for about 15 minutes

Place another pot on medium heat and put the vegetable oil. Pour the blended pepper, chicken roux, pinch of salt, curry, thyme and tomato paste

Stir fry for about 5 minutes then add enough water to boil the rice and cover for 10 minutes

Wash the rice thoroughly and pour into the pot. Allow it for about 20 minutes then check if it's cooked and the water dried off

Add the sliced onions, sweet corn, butter and cover for 3 minutes. Mix with a wooden spatula then remove from fire

Pour some vegetable oil into a frying pan and fry it

Serve your jollof rice with your chicken
