Grate 250g block of butter into the flour, crumb between fingers until butter is combined. Add water and mix until a dough is formed.

Roll out pastry into rectangle shape. Grate butter into middle, fold over 1 side, grate butter into fold. Fold other side over grated butter. Roll out & repeat 3 times.
