Boiled potatoes with veggie sausage egg sauce

Steps

Peel wash and boil the potatoes in salted water till a fork runs through it easily. Drain out the water and set aside to cool

Wash and chop up the vegetables including the onions and peppers

Chop the sausage. Break the eggs into a bowl, add salt, 1 teaspoon of garlic ginger paste, beat and set aside

Put a clean pot on heat, add the oil and allow to heat up.

Add the chopped onions and peppers and the remaining garlic ginger paste. Stir well and add the curry, mixed spices, salt and seasoning cubes.

Add the chopped sausages then add 3 tablespoons of water. Allow to cook for 1 minute then pour in the beaten eggs.

Stir to scramble and add more water if necessary. Reduce the heat to the barest and cover the pot. Allow to simmer for 2 mins or until the eggs are properly cooked.

Pour in the chopped veggies, mix well to combine then turn off the heat.

Serve with cooked Irish potatoes.
