My sister-in-law makes the best fudge and this is her recipe. You can substitute white chocolate for the dark chocolate but use slightly less sugar to counter the extra sweetness. I added some dried cranberries for a festive treat. Grating the chocolate takes time but you can use a blender or food processor.

Ingredients

  1. 300 ggrated milk chocolate
  2. 75 ggrated dark chocolate
  3. 300 gsoft light brown sugar
  4. 1small tin evaporated milk (approx 125g)
  5. 70 gbutter
  6. 225 gsmall marshmallows
  7. Handfulor two of dried cranberries

Cooking Instructions

    Oil a baking tray and line with cling film or baking paper. A smaller tray will give deeper fudge squares. Grate chocolate.

    Place evaporated milk, sugar, butter and marshmallows into a pan and melt gently over a low heat. Stir frequently. Once melted bring to the boil for about 5 minutes. Stir to avoid burning.

    Remove pan from the heat and add the grated chocolate. Leave for 30-60 seconds and then fold in gently until all combined. Add dried cranberries and then pour mixture into the prepared baking tray.

    Leave to set for 2-3 hour or overnight. Cut into squares or preferred shape. Serve or store in an airtight container.
