Wash and parboil rice, rinse and set aside to drain. Wash chicken season and cook till soft then fry in veg oil till golden brown. Grind fresh pepper roughly and chop onions, add little veg. Oil in pan and pour in grinded pepper and onions, add seasoning and salt to taste then pour in fried chicken and stir for 2-3 mins remove and dish.

In another pot Add veg. Oil fry tomatoes paste till dry, grind crayfish and add, Grind ginger extract juice pour in, add seasoning and salt, add curry and thyme, pound nutmeg and add then allow to boil.

Taste to be sure its ok, add in parboiled rice and allow to cook till soft and dry.

Dish and serve along side peppered chicken.
