Ingredients

8 servings
  • 3 tablespoonsfresh lime juice
  • 3 tablespoonswater
  • 2 tablespoonsolive oil
  • 1/2 teaspoonground cumin
  • 1/2 teaspoonsalt
  • 15 ouncecan black beans, drained and rinsed
  • 1 cupdiced tomatoes
  • 1/2 cupdiced sweet onion
  • 1/4 cupfresh mint or cilantro, thin slivers
  • 1 tablespoonsjalapeño, minced

Steps

  1. 1

    In a large bowl, mash 1/4 cup of diced mango with a fork; whisk in lime juice, water, oil, cumin and salt.

  2. 2

    Add remaining diced mango, beans, tomato, onion, cilantro or mint, and jalapeno to bowl; toss to mix

  3. 3

    Serve immediately or cover and refrigerate up to 1 day.
