Ingredients

  1. 1/4 cuppineapple jam (about 50 grams)
  2. 11 lbsboneless pork leg, thawed
  3. 1large onion, diced
  4. 1 sprigrosemary
  5. 1 tablespoonground cinnamon
  6. 1 tablespoonchicken bouillon powder
  7. 1 teaspoonground black pepper
  8. 2 cupsorange juice
  9. 1 cupapple juice
  10. 4 cupswhite apple cider
  11. 3 clovesgarlic
  12. 1 tablespoonground thyme and marjoram
  13. 1/4 cupbutter (about 50 grams)
  14. 3 tablespoonsoil
  15. 1 tablespoonsalt
  16. 4apples, sliced into half-moons

Cooking Instructions

    Blend the cider, pepper, onion, cinnamon, garlic, thyme, marjoram, juices, salt, and rosemary at low speed. Divide into two portions to prevent overflow from the foam.

    Melt the butter in the microwave and mix with the oil.

    In a baking dish or roasting pan, make shallow cuts in the meat without cutting all the way through to keep it intact. Pour the mixture over the meat and brush with the butter. Use your fingers to work the butter into the cuts to ensure it browns and stays juicy. Add 4 apple half-moons. Potatoes can also be used.

    Bake covered for 30 minutes at 390°F (200°C). Baste with pineapple jam and bake uncovered for an additional 15 minutes.
