Green ‘Cha Soba’ Noodle Salad

These green-coloured noodles are called ‘Cha Soba’. They are green because Matcha (ground green tea leaves) is mixed with buckwheat and wheat flour. But you can hardly taste Matcha. This extremely healthy-looking salad should be all green, and that means you can add anything green. The dressing is not quite green but green Wasabi paste is the key ingredient of the dressing. If you don’t like Wasabi, enjoy the salad with your favourite dressing. My 'Onion & Balsamic Sauce' is also nice.

Ingredients

1 servings
  1. 60 gDry ‘Cha Soba’ Noodles
  2. Green Vegetables as much as you want to eat
  3. *Suggestions: Lettuce, Baby Spinach, Rocket, Watercress, Cucumber, Avocado, Green Beans, Broccoli, Asparagus, Snow Peas, Snap Sweet Peas, Edamame, Spring Onion, Green Capsicum, etc
  4. Wasabi Dressing
  5. 1-3 teaspoonsWasabi Paste
  6. 2 tablespoons‘Ponzu’ *OR 1 tablespoon Soy Sauce & 1 tablespoon Rice Vinegar
  7. 1-2 teaspoonsSugar
  8. 1-2 teaspoonsSesame Oil *OR Canola Oil
  9. 1-2 teaspoonsToasted Sesame Seeds
  10. 1 tablespoon‘Mentsuyu’ (if you have it) *optional

Steps

  1. 1

    Combine all the dressing ingredients in a small bowl. Make sure Wasabi paste is well dissolved, otherwise you will have to cry. Taste it and alter the flavour to suit your taste, especially the amount of Wasabi.

    Cook ‘Cha Soba’ Noodles according to the instruction on the package. Basically cook in the boiling water for 5 to 6 minutes. You may with to cook some vegetables, such as Green Beans and Asparagus, with the noodles.

    Drain and rinse with cold water, then drain well. Arrange the cooked noodles and green vegetables on a plate. Drizzle the dressing over and enjoy.
