Heat oil in a pan add mustard when mustard crackles add fennel, next add green chilles chopped, curry leaves, turmeric then add chopped onion and saute till onions become translucent

Now switch off the flame

In a bowl add boiled mashed potatoes to this add salt, coriander leaves and above onion mixture and mix everything well.keep this aside

For inner layer - cut sides of bread and make four pieces and apply green chutney to each piece and sprinkle some garlic chutney upon green chutney.cover one plain bread piece upon that bread

Take a pan add 1tbsp butter and shallow fry this bread pieces,fry till bread is crisp

For covering add all the ingredients listed below covering and add sufficient water to this and make a smooth batter,batter should not be too thick nor too thin

Cover square fried bread, with potato mixture properly

Heat oil in wok and dip vada in batter and deep fry in hot oil

When ready drain on absorbent paper

Enjoy with green chutney
