Ingredients

  • 8 sliceswhite bread
  • 4 cupsshredded cooked turkey
  • 5 tbspbutter, divided
  • 8 ozcanned mushrooms, drained
  • 1/2 cupmayonnaise
  • 4 ozsliced cheddar cheese
  • 6 ozsliced monterrey jack/colby
  • 1 1/2 cupssoy milk (or milk of your choice)
  • 1 can (10.75 oz)cream of chicken
  • 1 can (10.75 oz)cream of mushroom
  • 3eggs, beaten (or equivalent of egg substitute)
  • 2/3 cupbread crumbs

    Spray a 13x9 baking dish. Arrange bread slices in prepared baking dish. Sprinkle turkey over bread.

  2. 2

    Melt 2 tbsp butter in medium skillet. Cook mushrooms in butter for 5 minutes. Spoon over turkey.

  3. 3

    Spread mayonnaise over top of mushrooms. Arrange cheese on top of mayonnaise.

  4. 4

    Combine milk, cream of chicken, cream of mushroom, & eggs in a large bowl. Mix well. Pour on top of cheese. Chill civered for 3 hrs.

  5. 5

    Preheat oven to 325 degrees. Bake casserole for 1 1/4 hrs.

  6. 6

    Melt 3 tbsp of butter. Add bread crumbs & mix until well combined. Sprinkle over casserole. Bake for 15 minutes longer.
