This recipe was originally made by my mum,she had a fractured wrist so was making easy to cook recipes and cheese on toast turned out to be a snack for tea time as well as a healthy breakfast for our family.

This recipe was originally made by my mum,she had a fractured wrist so was making easy to cook recipes and cheese on toast turned out to be a snack for tea time as well as a healthy breakfast for our family.

Boil potatoes, peel and pound,keep aside, chop tomato, and onion and keep ready, grate the cheese, as per ur preference and keep aside.Boil the sweet corn and keep ready after removing from cob(remember, this is fully optional.)

Now take a pan, put the butter or margarine, put the onion, and the cumin, mix, let onion just turn colour, now put the boiled potatoes and put the sweetcorn, tomato, and the salt and pepper. Mix well. Add in a quarter cup water n mix again. Taste salt, add if u want more. Now add in some grated cheese and mix. Switch off.

Apply a little margarine on bread if u like, put the potato mix on it, and spread it. Now put the cheese and put in oven for 6-10 mins on 180degrees centigrade.

Sprinkle red chilli powder if u like spicy. Serve with sauce or plain too. Any variation can be done in place of the sweetcorn... I made it this way. Mums style is without the corn.
