Rice Kibbeh with Boiled Potato

Wash the rice and soak it for 30 minutes.

In a pot over the stove, add water, salt, and turmeric. Bring to a boil, then drain the rice and add it to the boiling water.

Cook the rice until it absorbs the water, then transfer it to a baking sheet or tray and let it cool completely.

Mash the rice with the boiled potato and egg by hand until it forms a dough. Refrigerate for 30 minutes.

To make the filling, heat 1/4 cup oil in a pot over medium heat. Add the ground beef, then finely chop the onion and celery and add them to the meat. Add spices, salt, and pepper. Finally, add the raisins, almonds, and pomegranate molasses. Lower the heat and cook until everything is well combined. Let the filling cool completely.

Shape the rice mixture, fill with the meat mixture, and form into kibbeh. You can freeze them until ready to use.
