This is an easy-to-eat dish for summer, which can be a substitute for rice 😄. With a simple method, easy-to-find ingredients, and especially quick to make.

Peel the potatoes and carrot, then cut into 1/2-inch cubes. Wash the cilantro and cut into 1/2-inch pieces. If using fresh corn, remove the kernels. If using canned corn, rinse and boil for 1 minute.

Boil the egg for 15 minutes. Peel and cut into pieces. Bring a pot of water to a boil, then cook the potatoes and fresh corn for 5 minutes, the carrot for 2 minutes, and the green peas for 3 minutes. Transfer the vegetables to a bowl of cold water to keep them crisp. Place the vegetables in a large bowl, add the cilantro. Add a pinch of salt, a pinch of pepper, and 3 tablespoons of mayonnaise. Mix well.

Chill in the refrigerator for a while, then serve and enjoy.
