Ingredients

  • 1/2 cup- All-Purpose Flour (for kneading)
  • 1 1/4 cups- All-Purpose Flour (for recipe)
  • 1 cup- Cake Flour
  • 1 1/2 tsp- Cream of Tartar
  • 1 1/2 tsp- Baking Soda
  • 3/4 tsp- Cornstarch
  • 3/4 tspSugar
  • 3/4 tspSalt
  • 10 tbspn- Salted Butter (Frozen/Chilled)
  • 1 1/4 cup- Buttermilk

    Pre-heat oven to 400º F.

  2. 2

    Sift all the dry ingredients into a large bowl.

  3. 3

    If you are using frozen butter (which is preferred), chop the butter into 2 tablespoon chunks. In a food processor, use the pulse to chop the butter into small chunks. They should be a bit smaller than chocolate chips. DO NOT over pulse and allow the butter to soften!

    Using a spatula, mix the butter crumbles into the dry ingredients until it looks like a coarse meal.

  5. 5

    Slowly add 3/4 of your Buttermilk and stir until mixed thoroughly. Add in up to another 1/2 of Buttermilk until the dough becomes sticky, not dry, and can be rolled into a dough ball.

    Thoroughly coat your counter top and hands with a thin layer of flour. Drop the dough onto the counter and lightly coat with flour.

  7. 7

    Knead and roll the dough out until it is approx. 1/2 inch thick. Sprinkle with flour and fold over like an envelope, then fold over onto itself once again to make a thick square.

    Roll the dough out once more to your desired thickness and cut with circles with a glass, small bowl or cutter. Ideally, these should be about 1 1/2 inches thick but can really be to your preference at this point.

    Sprinkle each biscuit with a little flour, form the edges and place onto a cookie sheet. Biscuits will rise slightly when cooking so place about an inch apart.

    Cook in a 400º oven for about 16-20 minutes. I prefer to spread with melted butter after about 15 minutes, then let them finish cooking.

    Yield: 6-7 Large or 9-10 Smaller Biscuits.
