This is a dish that one can whip up when you want to smuggle in veggies and yet keep it simple.

Cook the Basmati rice in boiling water,strain and keep aside to cool

Finely chop the spring onions,keep aside
- 3
Chop the veggies of your choice and keep aside separately

Take a big kadai or frying pan,add in about one tbsp of olive oil and a little bit of butter or ghee,when nice and hot,toss in the chopped white bulb part of the spring onions,saute for 2-3 mins on high flame.then add in the green leafy part and saute

Meanwhile microwave or steam the carrots,beans,cauliflower till cooked yet crunchy and keep aside,Toss in ginger garlic paste and sautee and then add in the steamed or microwaved veggies,sautee for a min or so then toss in the chopped capsicum and bell peppers.It adds a lovely flavour if you want to add in shredded chicken or a egg scrambled with salt and pepper.mix in gently.add salt and pepper powder to you taste.Finally add in the cooked rice and mix in.Remember to do this on a low flame.
