I wanted to make a cake, originally, with only almond and coconut flours. I realized I didn't have baking pwdr or the energy to beat the butter and sugar. So brownies were the result. They also happen to be gluten-free.

I wanted to make a cake, originally, with only almond and coconut flours. I realized I didn't have baking pwdr or the energy to beat the butter and sugar. So brownies were the result. They also happen to be gluten-free.
Steps

Mix thoroughly the first four ingredients in a large bowl and set aside.

In a 2 qt saucepan mix the next 6 ingredients and heat at med high until they come to a gentle boil, whisking occasionally. Turn off heat and allow to cool completely, off the stove. Add the eggs and the "sour milk" of your choice.

Heat oven to 350°F (180°C) and place some parchment or aluminum into the bottom of an 8x8 pan, grease and cocoa (NOT flour) it, shaking out any excess.

Mix the chocolate milk with the eggs into the dry ingredients in the lg bowl with a rubber/silicon spatula until ALL the ingredients are thoroughly blended and there are no longer any dry bits left. At this point you can add any chocolate chips or nuts, even shredded coconut if you wish, or you can opt to press them into the top.

Pour the very thick batter into the prepared pan. Pat it into the corners until it's all even.

Place in oven and bake for 35 - 45 mins until skewer comes clean from the center. Let cool for about 10 mins before removing.
