Ingredients

  • 1 cQuinoa, soaked 2-6hrs and rinsed
  • 1 tbspEVOO
  • 1/2 cNuts and Seeds of your choice
  • 1/2dried Fruit of your choice
  • 1 tbspMaple Syrup or 1 1/4 tsp Truvia
  • 1/2 tspfinely grated Orange Zest
  • 1 tspground Cinnamon
  • PinchSalt
  • 1/2 canCoconut Milk

    In a medium sauce pan, add 2 cups water and bring to a boil. Add soaked and rinsed quinoa and reduce heat to a simmer. Cover and cook for 12 -15 minutes, fluff with a fork.

  2. 2

    In a medium pan, heat olive oil. Add the nuts and seeds and cook over medium heat, stirring a few times until the nuts become fragrant and slightly browned, about 2 minutes. Add the fruit, maple syrup, orange zest, cinnamon, salt and coconut milk. Stir to combine and heated through

  3. 3

    Add the mixture to the quinoa and stir to coat. Consider topping with ricotta or Sweet Cashew Cream Cheese
