1/2 cupQuinoa
1Chopped zucchini and 1yellow squash
1Chopped Chayote squash
4Chopped assorted peppers and 1/2 bell pepper

2 tablespoonsGrape seed oil

Steps

Add quinoa to boiling spring water and let cook for 15 min or until desired consistency.

Sauté chopped veggies in grape seed oil

Add cooked quinoa, let simmer and stir occasionally. Enjoy!
