Vanilla cupcakes
I made these for a Birthday and they turned out well.
Steps

Bake in a preheated oven at 175degrees for about 25 minutes or till well browned.

Cream sugar and margarine preferably using a mixer till it gets to almost white colour.

Beat your eggs by the side. Add vanilla extract.

Add your eggs mixture to the creamed mixture and mix well using a spatula. Don't overmix at this stage.

Sieve your flour and add baking powder to it.

Fold in the flour to the creamed mixture with eggs

At this point, I always add some more vanilla extract

Once ready allow to cool before decorating.

Add some water to the batter to make it of thin consistency. Be sure not to make it too thin.

I use a spoon to help put the batter in the cupcakes and to enable me to put equal amounts.

Allow to cool before decorating.

Color your whipping cream as desired and decorate with rosettes..
