Ingredients

  1. 2 1/4 poundsground camel meat (about 1 kilogram)
  2. 1.1 poundsground chicken breast (about 0.5 kilogram)
  3. 12 ouncesground lamb fat (about 350 grams)
  4. 9 ouncesbulgur, soaked and well-drained (about 0.25 kilogram)
  5. 2onions, grated and squeezed to remove excess water
  6. 1 tablespoonblack pepper
  7. 1 teaspoonallspice
  8. 1 packetbaking powder
  9. 1 tablespoonsalt

Steps

  1. 1

    Grind the camel meat again in a food processor until very fine.

    Add the remaining ingredients to the meat and knead the mixture very well.

    Place the mixture in the refrigerator for at least 1 hour. Shape into kofta and grill on a grill pan or bake in the oven as desired. I grilled mine, then at the end placed a piece of hot charcoal in the pan and covered it with a stainless steel strainer to infuse a smoky flavor. *The taste of the chicken and bulgur is not noticeable at all, and they also increase the amount of kofta.
