Ardei umpluți (Romanian stuffed peppers)

Ardei umpluți (pronounced arday oom-ploots) are peppers stuffed with minced meat and spices. This recipe is adapted from one given to me by a Romanian friend. It will serve 2-4 people depending on how hungry you are and how big the peppers are. Red or orange peppers are best for this as they have a slightly sweet taste. Yellow peppers will also work, but green (unripe) peppers will end up very bitter after boiling.

  • 400 gminced meat (fatty, such as pork, veal)
  • 4red peppers
  • 75 grice
  • 100 gpassata
  • 1onion
  • 2 tbspsweet paprika
  • 2 tbspdried coriander
  • 2 tbspdill
  • 1/2 tbsptarragon
  • 1/2 tbsporegano
  • 1 tbspcumin
  • 1 tspchili flakes
  • salt
  • pepper

    Carefully cut the stems out of the peppers and remove all the seeds from inside, rinse out the peppers with water.

    Finely chop the onion and gently fry on a low heat for a few minutes, then set aside.

    In a large bowl, add the mince, rice, passata, fried onion, and all the herbs and spices (you can use whatever you want). Add as much salt and pepper to suit your tastes.

    Mix everything together well with your hands.

    Stuff each pepper full with the mixture.

    Place the peppers in a large saucepan and fill with water until the peppers are covered. Bring to the boil, cover and leave to simmer on a low-medium heat for at least 90 minutes. Remember to check the water level occasionally and top up if necessary.
