Chiftele (Romanian meatballs)
Chiftele (pronounced keef-tellay) are Romanian meatballs containing potato and spices. This recipe was given to me by a Romanian friend and has been slightly adapted. Traditionally these might be served with a soup, but you could serve them with spaghetti, or a salad, or just eat them on their own.

Peel the potatoes and grate them. Then take the grated potato in your hands and squeeze out all of the excess water in the sink (you should have around 150g of potato after this). Repeat these actions for the carrot. Then finely chop the onion and crush the garlic cloves.

In a large bowl combine all your ingredients: the mince, grated potato, grated carrot, onion, garlic, and egg. Add a large amount of dill (fresh if you have it, otherwise dried will be fine), followed by salt and pepper to suit your tastes.

Using your hands or a large spoon, mix everything together well.

Roll the mixture into evenly sized ball or burger patty shapes. These can be as big or as small as you want but bear in mind the bigger they are the longer they will take to cook. Roll each meatball in flour until coated.

In a large frying pan or wok, heat up a good amount of oil and fry the meatballs in it until cooked through. This will take 10 minutes or more, depending on size. Serve hot or cold.
