Kundru is usually a rainy season veggie but, now also you can get in India. Eating Kundru decrease the blood sugar level.
I have done a simple recipe of Kundru with minimum masala and Pao-Bhaji masala. Outcome is delicious and yummy.

I have done a simple recipe of Kundru with minimum masala and Pao-Bhaji masala. Outcome is delicious and yummy.
Steps

Wash, clean and longitudinal cut the Kunduru.

In a wok heat oil. Splutter panch phutan. Fry onions till translucent. Add chopped chili and ginger. Cook for a minute in med flame.

Now mix cut Kunduru, salt, turmeric pwd, roasted moong dahl, tomatoes and pao bhaji masala.

Mix well, cover and cook in low medium heat till done.
Serve hot subzi with roti or rice.
