  • 6medium eggplants
  • 1 quartyogurt
  • 4 clovesgarlic, crushed
  • 1 tablespoondried mint
  • 2 tablespoonssalt
  • olive oil

Steps

  1. 1

    Cut off the tops of the eggplants, preheat the oven, and roast them, turning occasionally until they are cooked through.

    Mash them in a bowl and add the garlic, yogurt, mint, and salt. Mix everything together.
