Steps

Clean and boil the potatoes. Keep them aside to cool and then peel them off

Heat some oil in a pan and add some cumin seeds. Once it crackles add a tej pata and 1 onion cut into thin slices

Once onions turn golden brown add the ginger and garlic paste and saute it well. Add the tomato paste and saute for 2 mins

Add turmeric powder, jeera powder and chilli powder into some water mix and add this masala into above. Let the masala cook till it leaves oil

Once it's well cooked add the potatoes cut into halves into the masala and mix well

Add some water and bring to boil based on how much gravy you need. Add garam masala and remove. Garnish with coriander leaves and add some deep fried onions from top

Your aloo dum is ready to be served with rice or roti
