At home, we're huge fans of the classic San Fernando nachos from Foster's Hollywood, so for our Mexican night, we had to have them! We reinvented the recipe, and they turned out amazing!
Steps
- 1
These are the baked beans we used—they're canned but taste amazing! I hadn't tried them before, but their smoky flavor is special and works perfectly in this dish.
- 2
For the pico de gallo, dice all the ingredients as small as possible, mix well with a pinch of salt, and set aside. For the sour cream, blend all the ingredients except the cilantro until smooth. Chop the cilantro and stir it in.
- 3
Heat a skillet with a drizzle of oil. Add the ground beef, salt, and Tabasco. Cook over high heat until browned. Add the baked beans and cook for just a few minutes, since they're already cooked. Set aside.
- 4
To assemble, layer tortilla chips, beef mixture, pico de gallo, and shredded cheese.
- 5
Add a second layer the same way, but with extra cheese and the chopped jalapeños. Broil in the oven for about 5 minutes, then serve with sour cream and guacamole (homemade is best).
