Gur para is a traditional punjabi treat. This is made in prepration for festivals such as Holi, Diwali. This is a super simple recipe that only requires a few ingredients.

Gur para is a traditional punjabi treat. This is made in prepration for festivals such as Holi, Diwali. This is a super simple recipe that only requires a few ingredients.
Steps

Firstly in a large mixing bowl add all purpose flour, 1/3rd cup oil

Keep mixing flour and oil until you get coarse crumb like texture and the oil starts to hold the flour together,at this point add tsp of water at a time and knead it to make a firm dough. Cover and keep this dough for 10 mins

Divide the dough in three parts

Roll each portion of dough into half an inch thick round circle,cut them into verticle strips,and then into 2-3 inch long strips.Repeat for rest of the dough portions.

In a kadai, heat oil for deep frying on medium heat. Once the oil is hot, add the cut dough strips and fry until slightly brown and crisp. Do make sure to fry on medium flame so it get crisp evenly.

Drain them on kitchen towel and allow them to cool a bit

In another heavy bottomed pan, add chopped or grated jaggery,fennel seeds and 1 tsp ghee

On a slow flame allow it to melt, stirring continuously all the time.

Cook till you attain the consistency where u add a drop of jaggery into the cool water and it solidifies

At this point add the fried strips to the jaggery syrup. Mix quickly using two ladles so that all the strips are evenly coated with the jaggery. Once done turn off the flame.all this process must be done on slow flame

Once done the gur paare is ready. Transfer the gur paare onto tray or plate and cool completely.

Once cool seprate the strips carefully.taking care not to break them too much

Now gur paara is ready to serve

You can store them in airtight container for 15 days
