  1. 3eggs
  2. 1/4red chilli, chopped finely
  3. 1scallion, chopped finely
  4. 3cherry tomatoes, chopped finely
  5. 15 gCheddar cheese, grated or chopped
  6. 1 teaspoonbutter

    Chop all ingredients finely

    Heat butter in frying pan and fry scallion, chilli and tomatoes for 2 minutes

    Beat the eggs and pour into the pan and scramble for 1 minute, then add cheese and cook for a further minute. Serve and eat immediately
