Potoli pitha is a delicious kind of stuffed pancake prepared specially during festivals in Odisha. This dish is traditionally prepared and offered as Prasad (offering to god) at the famous Baladev Jew temple in Kendrapara in Odisha. Pithas are special delicacies from the Odisha cuisine and especially prepared on traditional festivals. This typical famous sweet represents the uniqueness of traditional cuisine of Odisha. Traditionally it is prepared using maida(all purpose flour) , but I used wheat flour & little maida. Very simple recipe yet very delicious

Potoli pitha is a delicious kind of stuffed pancake prepared specially during festivals in Odisha. This dish is traditionally prepared and offered as Prasad (offering to god) at the famous Baladev Jew temple in Kendrapara in Odisha. Take 1/2 cup atta, maida,salt and little cardamom powder in a mixing bowl. Add enough water to make a pancake batter. Mix carefully to remove lumps if any. Cover and keep it for minimum 10 mins.

Heat a pan. Add 1 tsp butter/ghee. Add the dry fruits and fry little. Then add coconut & fry on slow flame till the moisture of the coconut evaporates. Then add 1/2 cup of jaggery and fry till the jaggery melts. Then add chenna, remaining cardamom powder, pepper powder and fry for few secs on low flame.Remove from flame and allow to cool down.

Heat a tawa or frying pan. Rub in a little ghee for greasing the surface.
Take a ladle of the prepared batter and pour on the tawa. Use the ladle to spread the batter evenly into a circle. Cook on med flame. Spread some of the stuffing on the middle(length wise). Fold the circle from all sides to give it a rectangular shape, like shown in the picture and apply gentle pressure to close the pitha (Or one can use some of the batter as a glue).Flip over and cook for another 1-2 minute. - 4
Remove from flame and allow to cool down a bit. Make more such stuffed pancakes with the remaining batter and stuffing.

Mix the remaining 1/2 cup of whole wheat flour, melted or powder jaggery 1tsp and a little water in a separate bowl to make a batter of thin consistency. Dip each pancake/pitha in the wheat flour mixture. Heat ghee/oil,on a frying pan. Deep fry the pithas on med to low flame till u get a lovely deep brown colour. Remove the fried pithas in a plate.

Potali pitha is ready to serve. you can sprinkle some powdered sugar over it or simply serve as it is super tasty.
