For those nights when you come home from work starving and don’t want to wait long, but still want to eat healthy!
Steps

Slice the eggplant into rounds, then season with black pepper and olive oil. Let sit briefly, then pan-sear until lightly golden.

Beat the eggs and pour into a pan to make an omelet. When almost cooked, place 2 slices of bacon on top and roll up the egg. Remove and slice.

Meanwhile, microwave the pumpkin for 5 minutes.

Slice the cucumber into long strips.

Arrange everything on a plate. Drizzle a little chili sauce over the eggplant. Sprinkle with roasted peanuts for extra richness. Enjoy!
