Mix 1 cup of maida with 1/2 cup of Sophia in a wide vessel. Add around 1/2 cup water in small increments to a make a tight dough.

Divide this dough intob3-4 equal portions and shape it into balls. Place the dough into a flat surface use a rolling pin to flatten out into round discs of around 10-15 inches in diameter

Cut the discs vertically into long thin strips of around 1/2 inch width.

Heat oil in a pan and fry the namak pare in batches till they turn light golden brown in colour. Flip. When they are halfway cooked to ensure even browning from both sides.

Namak pare ready.
