A very delicious dish, especially great for gatherings!

Wash the chicken. In a pot, heat 2 tablespoons of oil, add the chicken, and sauté. Add enough water to cover the chicken, then add the onions, cardamom pods, and salt. Bring to a boil.

Wash and cut the vegetables. Fry them in oil and set aside once done.

Once the chicken is cooked, strain it and set aside the chicken broth.

Soak the rice for 15 minutes with 1 tablespoon of salt.

In a large pot, layer the chicken at the bottom. Mix the rice and fried vegetables together, then add them on top of the chicken. Pour in the reserved chicken broth, add 2 tablespoons of salt and the kabsa spice mix. Reduce the heat to low, cover, and cook until everything is done. Fry the cashews and sprinkle them on top of the maqluba before serving.
