#riceisthebest palak and rice is one combo which is loved by all. Here is a simple yet tasty recipe for palak khichdi.

Clean, wash and blanch the palak. Cool and puree it and set aside.

Cook rice with enough water and some salt till done and set aside.

Heat oil in a vessel. Add hing, cumin seeds, ginger, garlic and green chillies. Saute for a few seconds. Add the chopped onions and cook till they are soft. Add the palak puree and vegetable stock cube. Mix well.

Now add the rice and give it a good mix. Cover and cook on simmer till palak puree is properly incorporated in the rice. Place a piece of leave coal on a foil and place in the centre of the palak khichdi. Pour a few drops of oil on the leave coal. Cover and keep for 5 to 7 mins. Enjoy with raita of your choice.
