Ingredients

  1. 1small butternut squash, cubed
  2. 2red bell peppers, seddes and diced
  3. 1sweet potato, peeled and diced
  4. 1red onion, quartered
  5. 1 tablespoonchopped fresh thyme
  6. 2 tablespoonschopped fresh rosemary
  7. 1/4 cupolive oil
  8. salt and black pepper

    Preheat oven

  2. 2

    In a large bowl, combine the squash, red bell pepper and sweet potato.

  3. 3

    Separate red onion quarter into pieces, and add them to the mixture

  4. 4

    In a small bowl, stir together thyme, rosemary, olive oil, salt and pepper.

  5. 5

    Toss with vegetables until they are coated. Spread evenly on a large coating pan.

  6. 6

    Roast for 35-40 minutes in the preheated oven. Stir every 10 minutes or until vegetables are cooked through and browned.
