Roasted herb ‘spring’ potatoes

I had a bag of potatoes that got excited about spring finally coming and sprouted in celebration. Instead of throwing them out, I made a quick and simple Saturday lunch.

I had a bag of potatoes that got excited about spring finally coming and sprouted in celebration. Instead of throwing them out, I made a quick and simple Saturday lunch.

Wash potatoes and cut into wedges. Leave skin on if organic.

Sprinkle with olive oil
- 3
Add oregano, thyme salt and pepper
- 4
Mix with a spatula until potatoes are coated in oil and spices.

Cover with aluminium foil and bake at 180C for 25 min or until potatoes are soft when pierced with a fork. Take out of oven, stir so they brown evenly and bake for another ~20 min without covering, until they brown.
