Brinjal vegetable/ baigan sabzi

First heat oil in pan add aesofetedia, cumin and mustard seeds let it crackle....add chilli, ginger and garlic paste...add turmeric and coriander powder and let it cook

Now add brinjal and potatoes and salt and cook

When brinjal and potatoes are half done add chopped tomatoes.....and let it cook...garnish it with chopped coriander leaves......and serve hot with roti or rice

Tips÷ after cutting brinjal keep it in water...till you have started cooking....so it doesn't change colour....
