Ingredients

  • 2 cupsa.p.f
  • 1 cupsugar
  • 2 tspbaking soda
  • 1tspn vanilla essence
  • 1tspn salt
  • 3 cupsgrated zucchini
  • 1 cupdessicated coconut
  • 1 cupveg oil
  • 4large eggs
  • 1 tspcinnamon
  • 1/2tspn nutmeg

Steps

  1. 1

    Mix sugar,eggs and oil till well combined

  2. 2

    Add the sifted dry in and combine well

  3. 3

    Fold in in the zucchini and coconut until just combined.

  4. 4

    Put in a well buttered tin and bake at 180°c for 25 min or until done
