#myhealthykitchen - This is a healthy non-veg salad with the goodness of some assorted vegetables and chicken. Make them more colourful and vibrant for a real visual treat. More varieties of veggies, other than what I have used can be added. A little bit of dressing over it will tickle your taste buds. Have this colourful salad as a light meal. They are not only satisfactory but good for weight watchers. Such meal should be adopted for a healthy living. The chicken can be grilled for a healthier touch and added to the salad. So Bon Appetit !!!

Ingredients

  1. 1/2 cupboneless chicken, boiled & shredded
  2. handfulbaby spinach, washed & drained
  3. 1/2 cupred cabbage, sliced
  4. I capsicum, sliced
  5. 1tomato, sliced
  6. 1onion, sliced
  7. 1 tbsp.lime juice
  8. 1-2fresh red / green chilies, chopped
  9. 1/2 cupmushroom, sliced
  10. to tastesalt & pepper
  11. 1 tbsp.+1 tsp. olive oil

Steps

  1. 1

    Heat 1 tsp. oil in a pan and saute the mushrooms till they turns soft. Drain and keep aside.

  2. 2

    Now in a bowl, combine all the above mentioned ingredients and toss well.

  3. 3

    Just before serving, sprinkle salt and pepper powder and drizzle lime juice and olive oil.
