Ingredients

  • 2 lbsbeef/pork/veal mix
  • 1 cupitalian breadcrumbs
  • 3/4 cupgrated parmesan cheese
  • 3/4 cupgrated pecorino romano cheese
  • 3/4 cupgrated sharp provolone cheese
  • 1/2 cupricotta cheese
  • 1/4 cupminced garlic
  • 1 cupminced onion
  • 1 cupfresh chopped parsley
  • 3 tspsalt
  • 1 tspground black pepper
  • 1/4 tsppeperoncino (more or less to your taste)
  • 1 tspitalian seasoning
  • 1 tsporegano
  • 1 tspfresh basil
  • 3eggs, lightly beaten
  • 1egg yolk, lightly beaten

Steps

    Mix ingredients separate from meat. Once ingredients are mixed, add meat and mix again. Try not to over mix. Form 1-1/2" meatballs. Fry meatballs in generous amount of olive oil, until brown all over. Add to simmering sauce/gravy and cook for about another 30 minutes until fully cooked.
