Ingredients

  1. 1 kgsmall eggplants
  2. Stuffing:
  3. 400 gground meat
  4. 1 onion, finely chopped
  5. 1 tomato, grated
  6. pepper
  7. salt
  8. Sauce:
  9. 1 onion, diced
  10. 4 clovesgarlic, chopped
  11. 1/2 green peppers, finely chopped
  12. 2 tablespoonstomato paste
  13. vegetable oil

    Cut out the green top of the eggplants.

  2. 2

    To facilitate removing the inside of the eggplant, place on a flat surface and roll it with your hand back and forth while applying a little pressure.

  3. 3

    When the eggplants are soft, pierce them and remove the insides, while maintaining the outer layer intact. Fry the pierced eggplants and save the insides for later.

  4. 4

    To prepare the stuffing, fry the onion in vegetable oil until soft then add in the meat, pepper and salt. Cook until meat turns brown.

  5. 5

    Fill the eggplants with the stuffing and don't overfill them.

  6. 6

    To prepare the sauce, fry the onion, garlic and green pepper in the vegetable oil until soft, then add in the tomato paste and the insides of the eggplants along with half a cup of water, stir a little bit.

  7. 7

    Add the stuffed eggplant to the sauce and leave to cook for 15-20 minutes.

  8. 8

    Serve with vermicelli rice.

I am Syrian married to a Lebanese and living in Beirut. I am a mother of 3 children and a grandmother for 4 children.One of my daughters lives in Dubai, she loves my food and is always asking for recipes. This is how at my age, I entered the internet to be able to send recipes to my zeina, and of course chat with her when she is free. I also started adding recipes on shahiya instead of emailing them to her, this way she could also show them to her friends… Every Saturday, the whole family comes to my home for Lunch. I usually prepare food for the babies and food for the parents. on average I prepare 3 different choice of main dishes, salad, and dessert, we end up with more than 10 dishes on the table sometime. This is no pb for me, I don’t care if it takes me 10 hours to cook as long as my family enjoys the food. I can cook nearly all Lebanese dishes, and thanks to my Iraqi neighboord warda, I have become famous for my Iraqi recipes. Dishes I am famous for: Shiekh al Mahshi and Fatet el Batenjan

I had some friends coming over for dinner last week. So i wanted to cook something new. This Iraqi recipe was just great :) . I used olive oil instead of vegetable oil and i added some more spices. It turned out Great J . Delicous recipe, thanks!
