  • 2 medium potatoes, peeled and cut into medium cubes
  • 2 carrots, peeled and cut into medium cubes
  • 3 zucchinis, ct into medium cubes
  • 2 medium eggplants, peeled and cut into medium cubes
  • 1/2 kggreen beans, cut into medium peaces
  • 1/2 cauliflower, cut into medium pieces
  • 2 medium onions, cut into rings
  • 2 cupstomato juice
  • 1 chicken broth cubes, Maggi
  • 2 tablespoonsolive oil
  • 1/2 teaspoonblack pepper
  • 1/2 teaspoonpepper
  • salt to taste

    Mix onion rings with black pepper, pepper and salt.

  2. 2

    In a cooking pan add olive oil, onion rings and all cut vegetables. Combine well and fry on medium heat for 5 minutes; stir occasionally not by using a spoon but rather by shaking the pot and flipping ingredients in it until vegetables are half cooked.

    Add tomato juice and the chicken broth cube. Liquid should cover all vegetables, if not add a little water then bring to a boil. Keep on low heat for 10 min after it boils.

  4. 4

    Transfer vegetable stew to a baking tray, bake in oven on 160 degrees C. for almost 30 min. until vegetables are well cooked.
