Cabbage and Boiled Egg Salad for Dinner

Soak the red and green cabbage in salted water to clean. Then slice them very thinly. If you like, you can also add thinly sliced cucumber.

Boil the eggs until fully cooked, then cut each into 4 pieces.

Toast a handful of peanuts and sesame seeds. Lightly crush them for extra aroma.

Make the dressing: Mix yogurt, vinegar or lemon juice, salt, pepper, minced garlic, and olive oil until well combined. Drizzle over the salad when serving.

Arrange all the ingredients on a plate and enjoy. If you want to add some carbs, you can include boiled corn or sweet potato.
