You can have these as an appetizer especially during with big crowds or as part of the main meal. It is an easy way to make use of leftover mashed potatoes

Boil potatoes in salty water with skin on. When ready remove from heat and dip in cold water to stop them cooking further

Peel and mash potatoes well. Separate eggs and add egg yolks to mashed potatoes and mix well. If you prefer other spices, you can add at this point

Put mashed potatoes in a piping bag, snip a large tip and pipe onto tray about finger size long. You can shape with hands also. Put in the fridge for 20mins to set

Dip potatoes in flour then in egg whites and finally the breadcrumbs. Fry in hot oil till golden brown. Serve immediately while still warm
