1. Wash and soak the rice for 30 min. Cook the rice by adding ghee and let it cool completely. Fry the cashew in little ghee and keep aside.
2. Now heat 1 tsp of oil in kadai add onion, green chilli and coriander saute for 3 to 4 minutes. Let it cool down and grind into smooth paste. Keep aside.
3. Heat remaining oil in kadai add mustard, urid dal, curry leaves and hing.

4. When it starts to splutter add the coriander paste. saute for just 5 sec. Now add the rice mix well.
5. Garnish with cashews and coriander. Serve with cucumber raita or any of your choice.
