A clean, high-fiber noodle dish that's oil-free and healthy. You can add meat if you're not following a vegetarian diet.

Boil the vegetable noodles until about 80% cooked, then set aside.

Sauté the chopped garlic with 1 tablespoon of water until fragrant. Add the carrots and cook until slightly tender, then add the Chinese broccoli. (If it gets too dry, add a little more water.)

Season with soy sauce, mushroom sauce, and sugar. Stir to combine, then add the cooked noodles. Toss everything together until well mixed.

Transfer to a plate, sprinkle with black pepper, and serve. (You can also add chili flakes or vinegar, like in noodle soup, if desired.)
