Peel yam and cut into cubes.rinse and set aside. Chop the onions,cut ugu leaves, rinse and strain. In a pot add palm oil and a handful chopped onions. Fry till translucent.add grated scotch bonnet and fry.add cold water enough to cook the yam.

Bring to a boil. add spices and seasonings of choice.add the yam, stir and cover to cook.after about 15mins check and see if the yam is cooked.add chopped ugu leaves, the remaining sliced onions and 2 tablespoons ground crayfish.stir and cook for 3mins. Remove from heat, serve and enjoy.
